S'Age Bistronomy, Crows Nest - NOW CLOSED


New kid on the block S'Age Bistronomy has taken up residency where Waqu has previously lived in Crows Nest. S'Age Bistronomy boasts of creative Modern Australian dishes. Pop up for a casual meal or treat yourself to a reasonably priced degustation.


S'Age Bistronomy has a sleek, dim, modern decore in their casual dining area. Their menu is modern Australian with creative innovations in flavour. Entrees are $16-17 or you can order mains in the $25-33 range.

To get a good sample of the menu, I opt for the 5 course degustation at lunch time one Saturday recently. The degustation is reasonable at $70. 



Before the 5 course degustation kicks off, there are some snacks, there is the squid ink lavosh cracker smeared with smoked cod cream (above). I'm not sure what to expect but it's quite a pleasant snack to start off with and to activate the tastebuds. The smoked cod cream is quite subtle as is the squid ink flavour from the lavosh.

 MW loves hazelnut so I knew he would like the second snack - the hazelnut tart topped with walnuts. That crunch with the smooth hazelnut is quite nice.



MW orders an Issac beer and I opt for a Salty Sake cocktail with subtle hints of yuzu. I also enjoy the bread before the degustation kicks off.




The first dish is the Eggplant with tomato, dashi and cauliflower puree topped with crisps. The eggplant is soft and flavoursome from the dashi broth. The crisps make for great contrast to the soft texture of the eggplant. I really like this dish.





The next dish is the Smoked oyster and kangaroo tartare with wattleseed. Unfortunately MW is allergic to shell fish and I am not a fan of oysters so I give that part a miss but I do try the Kangaroo tartare. I'm not a massive fan of raw red meat so I offer up most of my tartare to MW. 


The mains of the degustation are the Roasted market fish with tamarind sauce, pork crackle and zucchini. The fish is caramelised which taste mildly sweet. The crunchy pork crackle is also a nice touch to contrast with the soft, moist fish. A well flavoured and seasoned fish.





The highlight of the degustation from S'Age bistronomy has to be the Grilled wagyu beef with whipped kombu with truffle sauce. There's also a rich mushroom sauce which you can also add the cream to add further flavour to the wagyu. The wagyu is perfectly cooked to my liking.

The dessert is a mix of savoury and sweet flavours which is confusing at first for the palette. The Cherry and Basil gelato is a really creative mix. I would have never thought of this combination. There's also the red wine tuille, pink peppercorn meringue which make for textual contrast. The meringue brings everything together adding that additional sweetness that you would expect in a dessert.



Summary: S'Age Bistronomy is a great spot for lunch or dinner. Go for the wagyu beef and the eggplant if you are going a la cart. Otherwise try the best of everything in the degustation.
